Winter Salad: Kale, Chickpea & Sweet Potato w/ Honey Tahini Dressing

We have no words to explain how good this salad is, honestly! Roasting the sweet potato, chickpea and sesame seeds together creates the most delicious flavour. The combination of the feta, sweet nutty dressing and crunchy kale with the freshness of the carrot and cucumber; it all works so incredibly well together.
This is the opposite of a sad salad. It's filling, comforting and bursting with flavour. We really encourage you to try this one and we hope you will love it just as much as we do.
Ingredients:
2 Sweet Potatoes (peeled & chopped)
1 Can Chickpeas (drained, rinsed & patted dry)
2 Tbsp Sesame Seeds
1 Tsp Smoked Paprika
Drizzle Olive Oil
Large Bunch Kale (finely chopped)
1/2 Cucumber (finely chopped)
1 Carrot (ribbons or grated)
75g Feta (crumbled)
Honey Tahini Dressing
4 Tbsp Olive Oil
2 Tbsp Honey
2 Tbsp Tahini
Juice 1/2 Lemon
Method:
1) Preheat oven to 180 degrees.
2) Add the sweet potato, chickpeas, sesame seeds, smoked paprika and olive oil to a lined baking tray and combine well. Season with salt.
3) Bake for 30 - 35 minutes or until just starting to brown nicely.
4) Meanwhile, combine the kale, carrot and cucumber in a large bowl. Season with salt & pepper.
5) Make your dressing by combining all ingredients in a jar. Shake to mix well.
6) Once the sweet potato & chickpea is cooked, add to the kale mix.
7) Top with the crumbled feta and drizzle with the dressing.
8) We love to serve this to the table as is, but you can mix everything to combine it all right away.
