Creamy Cashew & Basil Pasta Sauce

This pasta sauce is so delicious, creamy and bursting with flavour; not to mention full of nutrients. It couldn't be easier to make; you simply blend all the ingredients together and then pour it over your pasta. If you have fussy kids that require "hidden vegetables", then this is a perfect option.
Ingredients:
75g Cashew Nuts (roasted in advance if you have time)
2 Large Tomatoes
Large Bunch Basil (the more the better)
1 Garlic Clove
50ml Olive Oil
50ml Water
Method:
1) Add all ingredients to a blender and blend to your desired consistency.
Use this as you would any pasta sauce. We love to fry some prawns in garlic, add the pasta sauce, some peas, cooked pasta and let it all cook together for a few minutes. But, you can do this whatever way you fancy.
We highly recommend topping this with some grated parmesan before serving to bring all the delicious flavours together.
