This is a really simple recipe, nothing complicated, just good wholesome ingredients that come together to create a delicious heart-warming soup.
If you feel like your body needs some TLC, this soup will do just the trick on a cold day.
Ingredients:
Drizzle Olive Oil
1 Onion
2 Cloves Garlic
1 Carrot
2 Celery Sticks
1 Butternut Squash
Rosemary
1 Litre Chicken or Vegetable Stock
Method:
1) Sauté the onion in olive oil for 5-10 minutes (don't let it brown)
2) Add the garlic, carrot, celery, butternut squash and rosemary and stir
3) Pour in the stock and simmer for 30-minutes
4) Blend using a hand blender
5) Serve with a sprig of rosemary, a sprinkle of smoked paprika and fresh bread.
