This is one of the most delicious recipes I've made in a while. It's literally a bowl of goodness and is bursting with flavour. There's so many fresh ingredients that make this the perfect Winter recipe. Your body will thank you for it.
Ingredients:
1 Dessert Spoon Olive Oil
2 Spring Onions - Finely Chopped
2 Chicken Fillets
2 Garlic Cloves - Crushed
1-2 Inch Piece Ginger - Grated
1 Chilli - Finely Chopped
1 Red Pepper - Finely Chopped
2 Carrots - Finely Chopped
2 Celery Sticks - Finely Chopped
Juice & Zest of 1 Lime
200g Rice (of your choice)
1 Dessert Spoon Soya Sauce
1 Tsp Turmeric
2 Litres Chicken Stock OR Chicken Bone Broth
Handful Chopped Coriander
Handful Chopped Kale
Method:
1) Heat a heavy based dish and drizzle in the olive oil.
2) Add the spring onion, garlic, ginger, chilli, pepper, carrot, celery and lime.
3) Cook for 5-10 minutes on a low heat, not letting it brown.
4) Add the rice, soya sauce and turmeric.
5) Pour in the chicken stock/bone broth.
6) Add the raw chicken fillets.
7) Cover the mixture with a lid. Bring to the boil and allow to simmer for 20-minutes.
8) Remove the chicken and shread.
9) Add the chicken back in with the kale and coriander and simmer for 3-5 minutes.
10) Serve with some fresh lime, chilli flakes and chopped coriander.
