This is the most delicious flapjack recipe and it is so easy to make. These are high-fibre, energy-boosting and pair perfectly with a tea or a coffee.
Mixing coconut with the oat base adds a chewiness to the crunchy baked oats and the chocolate, coconut & sea salt topping is just the most perfect combination ..... if we do say so ourselves.
Ingredients:
200g Oats
75g Desiccated Coconut (plus extra to sprinkle on top)
4 Dessert Spoons Whole Chia Seeds
4 Dessert Spoons Honey
3 Dessert Spoons Smooth Peanut Butter
100ml Melted Coconut Oil
100g Dark Chocolate
Flaked Sea Salt (sprinkle on top)
Method:
1) Combine the oats, desiccated coconut and the chia seeds in a large bowl.
2) Add the peanut butter, honey and the coconut oil and mix well to combine.
3) Press into a lined baking tray or dish.
4) Bake in an oven preheated to 170 degrees for 15-20-minutes.
5) Melt the chocolate and spread over the flapjacks. Sprinkle with coconut and sea salt.
6) Allow chocolate to set before cutting into squares.
