This is a really delicious way to make sourdough toast more balanced. The cottage cheese adds lots of protein and the figs are full of fibre, antioxidants and vitamins. The honey and basil balance each other with their contrasting flavours and really elevate the whole plate.
This is the perfect post Pilates snack that you can have at any time of the day.
Ingredients:
1 Slice Sourdough Toast
2 Tbsp Cottage Cheese
4-5 Basil Leaves
1 Large Fig
1/2 Tsp Coconut Oil
Drizzle Honey or Maple Syrup
Method:
1) Combine the cottage cheese and basil and season with salt.
2) Fry the fig for 3-4 minutes in a little bit of coconut oil or olive oil.
3) Toast the sourdough.
4) Spread the cottage cheese mixture on the bread and top with the figs.
5) Drizzle with honey or maple syrup and top with more basil.
Enjoy.
