This is comfort food at its best. It's really nutritious, full of energy and bursting with flavour. The cooking time is really short, to keep everything crunchy and vibrant.
*If you want to make your own pesto, we use The Little Green Spoon recipe, which Indy has kindly allowed us share on the TPP Platform. But, if time doesn't allow, a good shop bought Pesto will do the trick. I recommend The Happy Pear.
Serves 4
Ingredients:
300g Pasta (I love to use wholewheat)
Drizzle Olive Oil
250g Raw Prawns (it's important they are the raw ones, you will know by their blue colour)
2 Garlic Cloves (minced/finely chopped)
200g Basil Pesto
150g Partially Cooked Broccoli (this is about half a head, cooked in boiling water for 2-3-minutes)
100g Frozen Peas (defrosted)
40g Grated Parmesan
Method:
1) Cook pasta in boiling water as per the instructions on the pack.
2) Drizzle olive oil into a pan on a relatively high heat.
3) Add the garlic and the prawns and cook for 10-minutes.
4) Add the broccoli, peas, pesto, pasta and parmesan.
5) Stir well to combine.
6) Return to the heat for no more than 5 minutes.
This is also really delicious served cold as a salad. I love making a large portion and having the leftovers cold the next day.
