Kale & Apple Salad

This is a really nice take on the classic Waldorf Salad. The dressing is made with yogurt so it's lighter and the addition of the kale makes it go that bit further. It's so easy to make, stores well without going soggy and is great to bring to a gathering/dinner party in a large bowl.
Ingredients:
Bunch of Kale
1 Large Apple
2 Celery Sticks
100g Walnuts
Juice Of 1/2 Lemon
50g Yogurt
Good Drizzle Honey
Salt & Pepper
1) Begin by roasting the walnuts in an oven preheated to 170 degrees. This will take 10-15 minutes (their colour will deepen).
2) Chop the kale, apple and celery and add to a large bowl.
3) Add the chopped walnuts (once cooled).
4) Add the yogurt, honey, lemon and season well.
5) Mix well and serve.
This stores really well in an airtight contained in the fridge for 2 days.
