This curry is the perfect comfort food to enjoy on a cold Winter evening. It's packed full of goodness so it makes for a really nourishing dish. If you have some left over, store it in the fridge and it's just as good day 2. It also freezes really well. We hope you enjoy.
Ingredients:
Olive Oil
2 Garlic Cloves
1 Chilli
1 Inch Fresh Ginger - Grated
1 Tsp Turmeric
2 Tsp Curry Powder
Large Sweet Potato Cut Into Cubes
Tin Tomatoes
Tin Coconut Milk
Tin Chickpeas
Handful Spinach
*Yogurt & Chopped Parsley (optional - to garnish)
Method:
1) Add to good drizzle of olive oil to a pan.
2) Fry the garlic, chilli, ginger, turmeric and curry powder in olive oil for 5-10 minutes
3) Add the sweet potatoe, tomato and coconut milk.
4) Bring to the boil and simmer for 30-minutes or until the sweet potato is soft.
5) Add the spinach and chickpeas and cook for another 5 minutes.
6) Garnish with yogurt and herbs.
7) Serve with rice.
