These are the most delicious treat. They have a gorgeous fudgy texture and are really filling. They make the perfect on the go snack.
Aoife's toddler loves these as a treat, so we really feel they are perfect for the whole family. They don't make a mess and their chewy texture keeps little ones busy for a while!
Ingredients:
130g Cashews
130g Oats
2 Tbsp Chia Seeds
100ml Coconut Oil (melted)
8 Large Medjool Dates (10 if they are on the smaller side)
2 Tbsp Desiccated Coconut
*Makes 8-10 balls
Method:
1) Soak the dates in boiling water for a few minutes while you weigh out the other ingredients.
2) Blitz the oats and cashews together in a food processor.
3) Then add the chia seeds, dates (make sure to drain them first) and the coconut oil.
4) Blitz until smooth.
5) Roll into balls using your hands and then roll in the desiccated coconut.
6) Refrigerate to let them harden.
These will store really well in the fridge for a few days.
