This is a really delicious and convenient dinner that is prepped in less than 15 minutes and you can then let the oven do the work while you do your favourite Pilates class!
This is a midweek meal that you will keep coming back to.
We love it served on a bed of quinoa or rice. You can use any vegetables that you have at home. We always try and go with what's in season
Serves 4
Ingredients:
4 Chicken Fillets
Drizzle Olive Oil
Chopped Garlic
Chopped Rosemary (any herb will work, fresh or dried)
Salt & Pepper
1 Onion
1/2 Butternut Squash
1/2 Aubergine
1/2 Courgette
3 Carrots
Drizzle Olive Oil
Tsp Smoked Paprika
Fresh Sprigs Rosemary
Method:
1) Line a tray with baking paper and preheat oven to 180 degrees.
2) Add the chicken, olive oil, garlic, chopped rosemary to a bowl. Toss together and season with salt and pepper.
3) Prepare your vegetables and add to the tray.
4) Toss with olive oil and paprika and season with salt and pepper.
5) Top with sprigs of rosemary.
6) Add the chicken fillets to the tray.
7) Place in the pre-heated oven and cook for 30-minutes.
8) Finally, enjoy your favourite Pilates class while the oven does the work.
