If you are looking for a treat, made with clean ingredients and lots of goodness, then look no further. This rocky road is rich, chewy, crunchy and perfect with a cup of coffee or tea.
You can switch up the nuts/seeds/fruit that you add to the chocolate mix to suit what you like or what you have at home.
Ingredients:
200g Dark Chocolate
4 Tbsp Almond Butter (any nut butter will work)
1 Tbsp Coconut Oil
1 Tbsp Maple Syrup
40g Pinhead Oatmeal
40g Chopped Almonds (roasting in an oven for 10-minutes before hand will bring out the flavour)
40g Pumpkin Seeds
30g Coconut Flakes
30g Goji Berries
Flakey Sea Salt
Method:
1) Combine the chocolate, nut butter, maple syrup and coconut oil in a pan.
2) Cook over a low heat until the chocolate has melted and the mixture is well combined.
3) Add all the dry ingredients (except the sea salt) and mix well.
4) Transfer the mixture into a lined dish. Top with sea salt and extra fruit/nuts/seeds.
5) Allow to set in the fridge and cut into slices when set (30-minutes - 1 hr).
6) This is best stored in the fridge and will keep for up to a week.
