This Cashew Pesto is a recipe from the Little Green Spoon (an incredible vegan recipe app by Indy Power).
It's a healthy, wholesome pesto that is bursting with flavour. It makes a gorgeous pasta sauce (just add pasta water), elevates the simplest of sandwiches and is delicious drizzled over eggs.
Ingredients:
85g Cashews
60g Fresh Basil
1 x Garlic Clove
Juice of 1/2 Lemon
125ml Olive Oil
Method:
1) Preheat oven to 180 degrees.
2) Roast the cashews in the oven for about 7 minutes until lightly golden.
3) Add all ingredients to a food processor and blend on high until thick and smooth.
4) Season to taste.
5) Store in an airtight jar in the fridge.
