Banana & Oat Cookies

These cookies are such a simple and delicious snack. They are sweet, oaty and the chopped almonds give the perfect crunch. You will have these made in minutes. They are so convenient and perfect for little ones (we make them without the chocolate topping for kids).
Ingredients:
Makes 6-8 cookies
2 Bananas (only 1 shown in video, but we have adjusted the recipe since filming)
50ml Coconut Oil (melted)
2 Tbsp Peanut Butter (smooth)
2 Tbsp Maple Syrup
100g Oats
1 Tbsp Ground Flaxseed
20g Almonds (roughly chopped)
Optional:
20g Dark Chocolate (roughly chopped)
Sprinkle Sea Salt
Other optional additions are raisins, dark chocolate chips mixed through, cinnamon or desiccated coconut.
Method:
1) Preheat oven to 180 degrees
2) Mash bananas and add coconut oil, maple syrup and peanut butter. Mix well.
3) Add in oats, flaxseed and chopped almonds.
4) Scoop out onto a lined baking tray (an ice-cream scoop is so convenient here). Shape and flatten cookies with a fork,
5) Top with dark chocolate.
6) Bake for 15-minutes.
7) Sprinkle with sea salt and place on a wire tray to cool.
