Honey Roast Carrot Soup

This is a sweet, comforting and nourishing soup that is so easy to make. Roasting the carrots is the key to bringing out their gorgeous flavour and the honey adds a lovely sweetness.
This soup is so delicious with fresh brown bread and lashings of butter. It's the perfect Autumn/Winter recipe.
Ingredients:
3 carrots
1 onion
2 cloves garlic
Drizzle Olive oil
2 Tbsp Honey
1 Pint Vegetable Stock
Method:
1) Preheat oven to 180 degrees.
2) Peel and roughly chop the carrots.
2) Place the carrots on a baking tray and toss with a good drizzle of olive oil, add the honey and season with salt and pepper.
3) Roast carrots for 20 minutes.
4) While the carrots are roasting, peel and chop the onion and garlic.
5) Cook the onion and garlic in another good drizzle of olive oil until tender.
6) Add the carrots and the stock and simmer for 10-15 minutes.
7) Blend the soup using a hand blender.
8) To make it feel fancy, top with a drizzle of cream and chopped parsley.
