Raw Caramel Slices

This is a delicious, raw, whole food recipe by Amie Atelier. These caramel slices are so rich, you won't believe that they are made with dates. They are so hard to resist and make the most gorgeous treat.
Recipe makes a big batch (24 small squares or 16 larger ones), so feel free to half quantities.
Use an 8 inch square tin, lined with parchment paper.
Ingredients:
Biscuit Base
200g Oats (ground)
3 Tbsp Peanut Butter
5 Pitted Medjool Dates
2 Tbsp Coconut Oil
Date Caramel
400g Pitted Medjool Dates
6 Tbsp Peanut Butter
2 Tbsp Real Butter
Sea Salt (to taste)
Topping:
150g Dark Chocolate (85%)
Half Tsp Coconut Oil
Sea Salt
Method:
1) Using a food processor, blend the oats until a flour like texture.
2) Add the remaining ingredients for the biscuit base and blend until a crumbly mixture forms.
3) Press firmly into the lined baking tin to create a compacted biscuit layer.
4) Soak the dates for the date caramel in boiling water for 15-minutes.
5) Drain the water from the dates and add to the food processor with the remaining ingredients for the caramel, blending until a thick caramel forms.
6) Spread evenly over the biscuit base and leave to rest in the fridge for 15/20-minutes.
7) Melt the chocolate with the coconut oil and spread over the caramel.
8) Add sea salt to taste.
9) Allow to set in the fridge.
11) Cut into squares and enjoy.
*Remove from fridge and allow to come to room temperature before cutting. This allows the knife to cut through the chocolate.
