Cucumber Pickle

This is a really simple and delicious recipe. A jar of this cucumber pickle will keep in the fridge for a week and it makes the perfect side to so many dishes; eggs, sandwiches, salads - the options are endless. It adds extra goodness, colour and so much flavour to any plate.
Ingredients:
2 Whole Cucumbers
2 Tbsp Apple Cider Vinegar
2 Tbsp Honey
Dill (small bunch)
Sprinkle Sea Salt
Method:
1) Slice your cucumber using a food processor or by hand.
2) Add sliced cucumber to a jar and add in the remaining ingredients.
3) Close jar, give it a good shake and leave in the fridge. You can use it pretty much straight away, but the flavour gets better when it's left for a few hours.
