Spicy Sweet Potato & Coconut Soup

This soup perfectly balances sweet and spicy flavours. It's a great Autumnal recipe to warm you up from the inside out and of course, it's full of immune boosting ingredients. We always love adding spice when we are feeling a cold or flu coming along.
You can top this with yogurt, chilli, lime, and coriander for an added burst of flavour.
Ingredients:
Drizzle Olive Oil
1 x Onion
2 x Cloves Garlic
2 x Sweet Potato
2 x Celery Stalks
1 x Tsp Chilli Flakes
1/2 Tsp Turmeric
1/2 Tsp Fresh Ginger - Grated
500ml Vegetable Stock
1 x Tin Coconut Milk
Optional to garnish:
Chilli
Coriander
Dollop Greek Yogurt
Lime
Method:
1) Fry the onion over a low heat until its softened.
2) Add the garlic, celery, sweet potato, spices and stock.
3) Simmer for 30-minutes until the vegetables have softened.
4) Add the coconut milk and blend to your desired consistency.
5) Serve with a garnish of yogurt, chilli, lime and coriander (optional, but recommended!).
