This soup is so so good. It's packed full of nutrients and even has some protein in the peas. The flavour is mild overall and it honestly tastes so good; probably a lot better than you would expect given the colour.
Ingredients:
Drizzle Olive Oil
Knob Butter
1 x Onion
3 x Cloves Garlic
2 x Sticks Celery
1 x Head Broccoli
5 x Small Potatoes (2-3 if using a larger size)
150g x Peas
1 x Large Handful Kale
1.5 Litre Veg Stock
1 Small Sprig Mint
*Mint is optional but we really recommend. It's so, so good. If using it, save a little bit to garnish along with some cream and a drizzle of olive oil.
Method:
1) Add the butter & olive oil to the pan to melt and combine.
2) Add the onion an sauté.
3) Add the garlic and sauté for another couple of minutes.
4) Put in all the remaining vegetables and allow to cook for about 5-minutes (except the mint).
5) Add the vegetable stock and cook over a low heat for 25-30-minutes.
6) Add the mint and blitz the soup until smooth (or your desired consistency).
7) Add salt & pepper to taste.
8) Serve topped with some cream, a fresh sprig of mint and a drizzle of olive oil.
Enjoy.
