This is so simple, it doesn't even feel like a "recipe". Think of it more as a form of recipe inspiration! The food processor does all the work.
This is great for hosting or to keep in the fridge. When we make a batch, we use it for a few days and it's loved by all the family.
The secret to the flavour is fresh vibrant carrots, toasting your pumpkin seeds (don't skip this step), seasoning well with salt flakes and a good quality sesame oil. You can play around with the dressing and add what you love. Sometimes we like to use a mix of honey, tahini and olive oil too.
Ingredients:
6 Carrots
4 Tbsp pumpkin seeds
2 Tbsp Sesame Oil
Salt Flakes
Method:
1) Grate your carrots using a food processor (a hand grater would work too)
2) Toast your pumpkin seeds in a dry frying pan over a high heat for 3-5 minutes. Keep tossing, being careful not to burn (they begin to smell delicious, expand a little and you may hear the odd pop when they are ready).
3) Add the pumpkin seeds to the carrot with the sesame oil and sea salt and mix well.
