This Granola is so easy to make and once you make your own once, you'll find it difficult to buy it in the shop again.
Shop bought granola is often overpriced, sugar-laden and includes a concoction of preservatives.
This recipe is delicious and can be adapted to suit what's in your pantry.
Ingredients:
200g Oats
60g Flaxseed
60g Pumpkin Seeds
50g Almonds
3 tbsp Coconut Oil
3 tbsp Maple Syrup
40g Desiccated Coconut
60g Sultanas
Method:
1) Preheat oven to 160 degrees.
2) Mix the oats, nuts and seeds together in a bowl.
3) Melt the coconut oil and add to the dry mixture with the maple syrup. Mix well.
4) Place mixture in a baking tray lined with baking parchment.
5) Bake in preheated oven for 20-minutes or until nuts are toasted and oats are golden.
Keep a close eye and give the mixture a shake every 5 or so minutes for even toasting.
6) Once Granola is cooked, add in the coconut and sultanas.
7) Once Granola is cooled, transfer to an airtight container.
*If you want to simplify this recipe further, and don't want to weigh ingredients the dry ingredients, you can use
3 large cups for the dry ingredients. 2 large cups of oats and 1 large cup of your mixed nuts and seeds.
*Adapt this recipe to include the nuts, seeds and berries you like and play around with the quantities
to suit your taste. Goji berries are amazing in this Granola.
