Sweet Apple & Cinnamon Overnight Oats

These overnight oats are so delicious, easy to make and perfect for busy mornings. As well as being incredibly tasty, they make a really nutritious, high fibre breakfast, that the whole family can enjoy. If you use a strained greek yogurt, it will be higher in protein, making this breakfast even more filling and nutritious.
This can be used as a base recipe. You could swap the apple & cinnamon for banana & peanut butter or raspberry & vanilla; whatever you fancy or have to hand at home.
The dates and pumpkin seeds are optional, but absolutely recommended! They add a delicious sweetness and texture.
Serves 4
Ingredients:
160g Porridge Oats
4 Tbsp Greek Yogurt
200 - 300Ml Milk
4 Tbsp Chia Seeds
6 Medjool Dates - Chopped
2 Grated Apples
2 Tbsp Pumpkin Seeds
2 Tbsp Maple Syrup
1 Tsp Cinnamon
Method:
1) Simply combine all the ingredients in a large bowl and mix well.
2) Add more milk if needed to achieve a runny-ish consistency. Remember, the chia seeds will absorb liquid.
3) Transfer to an airtight container and leave in the fridge overnight.
4) When serving, top with more apple, cinnamon, a sprinkle of granola or whatever you fancy.
*More milk or yogurt can be added if the texture is too dry.
This will keep in the fridge up to 4 days.
